Personally, I love that so many people are baking right now. I love to cook and have for a few years, but I have never been much of a baker. It was always intimidating to me. However, I decided to give it a shot during quarantine, and I’ve baking at least once a week.
For those of you in search of recipes to stress-bake and take your mind off the never-ending news cycle, I thought I would share my favorite recipes from the past couple of months. All of these are fairly simple with minimal equipment. The most you’ll need is a rolling pin, some mixing bowls, and utensils. Let’s roll up our sleeves and get into the list!
Biscuits – Fox in the Snow
I think everyone in the Columbus, Ohio area has baked these biscuits – and for good reason! Cult-favorite coffee shop and bakery Fox in the Snow released their recipe for these buttery, flaky biscuits a few weeks ago. Don’t be intimidated – the recipe is straight forward and much easier than it looks! I’m not an expert baker by any means, and mine turned out nicely. The biscuits were so delicious, I’m still thinking about them (sigh).
Chocolate Zucchini Bread – Love and Lemons
I grew up eating zucchini bread… when we were kids, one of our family friends would always send my sister and me home with some every time we visited her house. When I saw the recipe for chocolate zucchini bread from Love and Lemons (she has the best recipes!), I knew I had to bake it. It was delicious and easy to make!
Arugula Pizza – Half Baked Harvest
This pizza is technically baked, so I think it’s fair to include it with my list. This recipe from Half Baked Harvest sat untouched in my Pinterest board for a long time – probably because I’m more likely to order takeout when I’m craving pizza than bake my own, ha! I cheated and used a pre-made pizza crust from Trader Joe’s, but followed the recipe other than that. I love arugula, especially, so I knew I was bound to love this recipe. Plus I felt like I was eating a healthier version of pizza!
Banana Muffins – The Kitchn
I couldn’t curate a quarantine baking list and NOT include banana bread! It’s definitely en vogue this quarantine season. Actually, we’ve made banana bread three different times (which seems like a lot now that I’m thinking about it). Banana bread was also one of my childhood dessert staples, so it just feels nostalgic and comforting to me. And the practical side of me loves that you can use up the bananas that were about to go bad! I used this recipe from The Kitchn.
